Creamy Crab Salad

INGREDIENTS

1 lb. imitation crab meat , flake style
2 tablespoons minced jalapeno , 1 medium jalapeno seeded and deveined
¼ cup diced shallot
½ cup sliced celery stalks
¼ cup mayonnaise
¼ cup light sour cream
1 tablespoon lemon juice , fresh squeezed
.5 ounces chopped fresh dill
½ teaspoon salt
¼ teaspoon pepper

METHOD

PREPARE THE DRESSING:

  1. In a large bowl, combine the mayonnaise, light sour cream, lemon juice, salt, pepper, fresh chopped dill and mix well.

PREPARE THE CRAB SALAD:

  1. Add the flake style crab meat, minced jalapeno, diced shallots, sliced celery and toss until everything is well coated in the dressing.
  2. Refrigerate for 30 minutes before serving as a dip or tucked into a sandwich.
