Vegetarian Burrito (Copycat Chipotle)

This Mexican menu has always been a crowd pleaser! One of my favorite menus to serve at a party or picnic.

INGREDIENTS

1 large tortilla (10″ round)
3/4 cup Cilantro Lime Rice
1/2 cup Black Beans
1/2 cup Fajita Veggies
1/4 cup Pico de Gallo
1/2 cup Corn Salsa
2 tbsp Sour Cream
1/4 cup shredded Montery Jack Cheese
1/4 cup Guacamole
1 cup Romaine Lettuce (shredded)

Method

  1. Place a large tortilla (10″) on a flat surface. (Note: I like to heat my tortilla first on the stove at a low flame. Heat both sides of the tortilla till lightly brown. Alternatively, you could microwave the tortilla.)
  2. Start with a bed of Cilantro Lime Rice (3/4 cup)
  3. Layer Black Beans on top (1/2 cup)
  4. Add Fajita Veggies (1/2 cup)
  5. Top with Pico de Gallo (1/4 cup)
  6. Add Corn Salsa (1/2 cup)
  7. Spoon Sour Cream on top (2 tbsp)
  8. Sprinkle shredded Monterey Jack Cheese (1/4 cup)
  9. Add Guacamole (1/4 cup)
  10. Top off with Romaine Lettuce (1 cup)
