Corn Salsa

Mexican cuisine features a wide variety of fresh, delicious salsas and other similar side dishes that taste absolutely amazing with tortilla chips or on top of most Mexican main dishes. One such delight is a classic corn salsa.


2 cups cooked corn (or a 16 oz can)
1/2 medium red onion (finely diced)
1/4 cup cilantro (finely chopped)
1/2 tsp jalapeño (minced)
1/4 tsp salt
1/4 tsp black pepper (crushed)
1/2 lime (squeezed)


  1. Add 2 cups cooked corn (or a 16 oz can) to a bowl.
  2. Also add 1/2 medium red onion (finely diced), 1/4 cup cilantro (finely chopped), and 1/2 tsp jalapeño (minced).
  3. Add 1/4 tsp ground black pepper and 1/4 tsp salt.
  4. Squeeze in the juice of 1/2 lime.
  5. Mix well. Enjoy fresh!
