Chia pudding

This creamy, lightly sweetened pud is surprisingly filling due to the soluble fibre in chia seeds – topped with quickly cooked apples, it’s a simple and healthy brekkie.

Ingredients

500ml oat milk
100g chia seeds
2 tsp vanilla extract
1 tbsp maple syrup
3 Braeburn apples, peeled, cored and chopped
30g raisins
½ tsp ground cinnamon

Method

  1. Put the oat milk, chia seeds, vanilla and maple syrup in a large bowl. Stir to combine then cover and refrigerate overnight or for at least 6-8 hours.
  2. Combine the apples, raisins and cinnamon with 3 tbsp of water in a medium pan. Put over a medium heat, cover and simmer for 10 minutes until the apples are softened. Remove from the heat and leave to cool completely.
  3. Give the chia pudding a good stir and divide between four serving glasses. Top with the apple mixture to serve.
