Avocado on toast with smoked salmon

Creamy avocado and delicious smoked salmon feel like an indulgence, but this dish comes in at under 300 calories meaning you can have a little bit of luxury any day of the week.


1 avocado
2 tbsp fat-free yogurt
½ lemon, juiced
2 slices rye bread, toasted
a pinch cayenne pepper
75g smoked salmon
1/4 cucumber, ribboned with a veg peeler
a handful salad cress

½ red chilli, seeded and finely diced
finely chopped to make 1 tbsp mint
½ lemon, zested and juiced
1 tomato, finely diced
1 tsp white wine vinegar


  1. Make the dressing by mixing all the ingredients together with some seasoning.
  2. Halve the avocado, remove the stone and scoop the flesh into a bowl.Add the yogurt and lemon juice and mash everything with a fork. Season well with salt and black pepper.
  3. Divide the avocado between the toasted rye bread, sprinkle over a little cayenne pepper and add the smoked salmon and cucumber. Spoon over the dressing, then top with the cress.
